Aubergine, Tomato and Cheese Bake / Melanzane alla parmigiana

It’s loved throughout Italy and many other countries across the world. You can see variations in the recipe through the regions of Italy but all build on the blend of aubergine slices, tomatoes, and cheese. This is my vegetarian adaptation of a super quality flavoursome meal. It has the dual characteristics of being a favourite comfort food and a classic masterpiece meal.
